Ingredients:

1 cup sour cream
2 whole scallions, thinly sliced
1 tbsp. fresh lemon juice
1 tbsp. fresh chives, chopped
1 tsp. fresh chives, chopped (for garnish)
1/4 cup red salmon caviar, drained and rinsed
3 tbsp. red salmon caviar (for garnish)

Directions:

Mix sour cream, scallions, lemon juice and 1 tbsp. chives in a medium bowl. Gently fold in 1/4 cup caviar. Tranfer to a serving bowl. Cover and refrigerate for at least 6 hours (or up 1 day).

Sprinkle dip with remaining 1 tsp. chives and 3 tbsp. caviar. Serve with toast points, good crackers or raw vegetables.
