2 apples, peeled and chopped
1 cup dates, chopped
1 tsp. bicarbonate of soda
1 cup boiling water
4-3/8 oz. butter
1 tsp. vanilla essence
1 cup sugar
1 egg
1-1/2 cups sifted flour
Topping:
2-1/10 oz. butter
1/2 cup brown sugar (firmly packed)
1/2 cup milk
2/3 cup shredded coconut

Directions:

Preheat oven to 350°F. Mix apples, dates, bicarbonate of soda and water in bowl. Cover with plastic and stand until cooled to luke warm.
Beat butter vanilla essence and sugar together until light and fluffy. Add egg and beat well. Place mixture in bowl; stir in sifted flour alternately with apple mixture.
Spoon in greased and lined 18-cm x 7-cm square tin and bake for 50 minutes. Remove from oven, carefully spread with topping, return to oven and bake for a further 25-30 minutes or until cooked.
Topping:
Place all ingredients in pan, stir over heat until butter has melted and sugar dissolved.
