12 whole fresh habanero chiles, stems removed
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup chopped carrots
1/2 cup white vinegar
1/4 cup fresh lime juice
1 tbsp. olive oil

Directions:
|
Saute the onion and the garlic in the oil until soft about 3-4 minutes. Add the carrots with a small amount of water. Bring to a boil; reduce the heat and simmer until the carrots are soft.
Place the mixture and the chiles in a blender and puree until smooth. Combine the puree with the vinegar and the lime juice and simmer for 5 minutes to combine the flavors. Take off the burner and let cool.
Strain the mixture into sterilized bottles and seal.

If you are a chile head like me you can find all kinds of things for this. Just watch out while making it and wear gloves while handling the chiles.
