Ingredients:

2 tbsp. vegetable oil
2 cloves garlic, minced
1 sm. onion, chopped
1 tomato, sliced
2 cups snow peas, ends trimmed
1 to 2 tbsp. water
1 tbsp. oyster sauce
1 sm. red bell pepper, diced
1/2 lb. pork loin, cut in strips
Salt and pepper, to taste

Directions:

In a medium skillet heat vegetable oil. Add sauteed garlic and pork; cook pork until no longer pink. Add onion and cook until transparent. Add tomatoes, cover and cook for 10 minutes in medium-high heat.

Add snow peas, bell pepper, water, oyster sauce, salt and pepper; cook uncovered for another 5 minutes or until vegetables are crisp tender.

It is a a fast and easy dish that I put together when I used to live in Hawaii. For me it's delicious because of the Chinese flavor on it. I suggest that you don't overcook the snowpeas, when they become soggy it's not going to be good.
