Ingredients:

2 scoops vanilla bean ice cream
1 tbsp. crushed pecans
1/2 tbsp. whole fennel seeds
1/4 tsp. fresh ground cinnamon
1 fl. oz. Pedro Ximenez Sherry
1 pinch julienned orange zest

Directions:

Place ice cream in serving container then top with Sherry, followed by pecans, cinnamon, fennel and pecans. Garnish with orange zest.

This recipe is a natural pairing with a glass of Pedro Ximenez. Do not substitute other drier styles of Sherry!

Excellent flavors. The Sherry was a phenomenal addition, but my favorite part of it was the orange zest. I used the zest of a blood orange. I'll buy another bottle of PX Sherry just to make this again.
