Ingredients:

3 lb. chicken, skinned and chopped
1 stick butter or margarine
1/2 cup honey
3 to 4 bananas *

Directions:

In a cast-iron pan, melt the butter, then add the honey. Lower the heat a bit and add the chicken. Cook for 20 minutes, turning the chicken at least 4 times.

Transfer chicken and sauce to a casserole dish. Add sliced bananas. Cover and bake at 250ºF for 45 minutes.

If there is too much liquid at end of cooking you may add ¼ to ½ cup thin cream to make sauce.

Great with plain rice.
