Ingredients:

10 oz. fresh or frozen chopped collards
1 pkg. mushrooms, sliced
3 carrots, sliced
1 can cooked black beans
2 cans (lg. each) chicken stock
1 can diced tomatoes with jalapenos
1 cup cooked rice
1 onion, chopped
Red pepper flakes, to taste
1 ham hock

Directions:

Add chicken stock to large soup pot, turn heat to medium-high. Add ham hock, and collards. Add mushrooms, onions and carrots soup. Cook until collards are soft. Add tomatoes, black beans, rice and pepper flakes to taste. Take out ham hock and chop meat, add to soup and serve.

Comments from Laurie Harvey :

This soup can be made vegan by using vegetable stock and omitting ham hock. It also can be low carb by omitting rice. I have also cooked the rice in the soup itself. It is a very easy and tasty soup.
