1 lb. ground beef, browned and drained
1 can refried beans

1 can mushrooms
1 env. enchilada seasoning
1 can enchilada sauce
Shredded cheese (Mexican blend or Cheddar)
Sour cream
Flour tortillas
Salsa
Hot sauce

Directions:

Brown the ground beef and drain the grease. Next add the beans, jalepenos, mushrooms, seasoning and sauce. Simmer until all are well blended. Let sit for 5 to 10 minutes. Next fill each tortilla with the mixture and roll the tortilla. Top with cheese and salsa. Microwave for 2 minutes. Top with sour cream and your favorite hot sauce.

Comments from Dawn :

To make a lower fat verson, use ground sirloin or even chicken and low fat sour cream. I sometimes add onions and chili's and other peppers to my tasting.

YUMMY!

User Reviews:

Very good. She added tomatoes to the recipe though. Thought it would compliment the rest of the dish. My girlfriend did a great job making them. Good but they reminded me more of a burrito. But who cares, still good.
