1 lb. ground beef, browned and drained
1 can refried beans
Diced jalapenos (optional)
1 can mushrooms
1 env. enchilada seasoning
1 can enchilada sauce
Shredded cheese (Mexican blend or Cheddar)
Sour cream
Flour tortillas
Salsa
Hot sauce

Directions:

Brown the ground beef and drain the grease. Next add the beans, jalepenos, mushrooms, seasoning and sauce. Simmer until all are well blended. Let sit for 5 to 10 minutes. Next fill each tortilla with the mixture and roll the tortilla. Top with cheese and salsa. Microwave for 2 minutes. Top with sour cream and your favorite hot sauce.

To make a lower fat verson, use ground sirloin or even chicken and low fat sour cream. I sometimes add onions and chili's and other peppers to my tasting.

Very good. She added tomatoes to the recipe though. Thought it would compliment the rest of the dish. My girlfriend did a great job making them. Good but they reminded me more of a burrito. But who cares, still good. |
