1 lb. dried Anasazi beans
6 cups water
1/4 cup finely chopped onions
1 clove garlic, crushed
6 slices bacon, chopped
1/4 cup finely chopped green pepper
1 jalapeno, diced
1 tsp. chili powder
1/2 tsp. cumin
1/4 tsp. cayenne powder
Salt and pepper, to taste

Directions:

In a saucepan, combine beans and water and cook at a gentle boil for 1-1/2 hours or until tender. Drain beans, reserving liquid. In a skillet, saute onion, pepper, garlic and bacon. Add sauteed ingredients to beans and mash all together, adding liquid a little at a time, until mixture is smooth. Serve with tortillas or cornbread.

The Anasazi beans make this recipe much sweeter than most refried bean recipes.
Note: These refried beans may be frozen for later use.
