Ingredients:

4 oz. fresh spinach leaves
2 sm. red onions, finely diced
1 tbsp. olive oil
1/2 cup warm water
1 egg
4 cups white flour
1-1/2 cups grated blue cheese (loosely packed)
1 tsp. salt
1 tsp. sugar
1-1/2 tsp. rapid rise yeast

Directions:

Heat the olive oil in the pan and sautee the onions until lightly golden. Add the spinach leaves, stir well, cover tightly and let sit 5 minutes off the heat. Remove lid; let cool.

Put the onion/spinach mixture at the bottom of the bread machine pan. Add water and egg. Add flour so that it covers the mixture. Add cheese. Put salt in one corner and sugar in another corner. Put yeast in a small well in the center (but make sure it doesn't get wet). Use the regular setting on bread machine.

I did this in a bread machine, but you certainly don't have to. Just follow the directions for any standard bread in terms of rising and kneading and baking.
