Ingredients:

4 eggs
1 cup oil
15 oz. canned pumpkin
1-2/3 cups sugar
2 cups flour
2 tsp. cinnamon
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Directions:

Beat eggs thouroughly with oil. Mix in pumpkin and set aside. Combine remaining ingredients in a separate bowl. Gradually add to pumpkin mixture and mix well. Pour into ungreased jelly-roll pan. Bake at 350°F for 25-30 minutes. Cool completely before frosting with Perfect Cream Cheese Frosting.

Even folks who are not so keen on Pumpkin will love this one. It is really a sheet cake. Very moist and light. Tried it out on Halloween and will make again for Thanksgiving. I added a little more cinnamon and a bit of nutmeg. Pecans would also be great. For my holiday table this recipe will take the form of a layer cake or roll - think "Bouche de Noel". Really great recipe!
