3 to 4 chicken breasts, skinned and de-boned
3 cans creamed mushrooms
1 onion, chopped
2 eggs
1 box rice
5 tbsp. soy sauce

Directions:
|
Cut the chicken into cubes. Place in a dish and marinate with approximately 3-4 tbsp. of soy sauce for 10 minutes.
Heat 1 tsp. oil in a pan or wok, add the chicken until lightly browned. Meanwhile, chop the onion and place in the pan with the chicken. Leave on a low-medium heat for about 10 minutes.
Next add the creamed mushrooms and stir occasionally. Leave on a low heat for 30 minutes or until chicken is thoroughly cooked.
For the Rice:
Boil a pan of water and add a pinch of salt. Cook the rice according to instructions on the box. When cooked transfer to a large bowl; add 3-4 tbsp. of soy sauce and mix well.
Beat 2 eggs and pour into a deep frying pan/wok. Scramble the egg until not quite scrambled and add the rice; mix until heated through.
