Ingredients:

1-2/3 cups flour
1 cup granulated sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2 lg. eggs
1 cup plain pumpkin
1 stick butter, melted
1 cup chocolate chips

Directions:

Heat oven to 350°F. In medium bowl mix flour, sugar, pie spice, baking soda, baking powder and salt. Set aside.

In another bowl mix eggs, pumpkin and butter. Whisk until well blended. Stir in chocolate chips. Pour over dry ingredients and fold in. Scoop batter evenly into muffin cups. Bake 20 to 25 minutes. Let cool slightly before serving.

Comments from Amanda :

* If you line the muffin tin with muffin papers or foils before baking, the muffins will cook better without burning. It also saves on the cleanup!

User Reviews:

Excellent recipe! This recipe makes about 18 muffins. I also altered the recipe for a friend who can't have much chocolate - I reduced the amt of chocolate by half and added a compensating amount of plain pumpkin. It still worked well.
