4 eggs
2 cups sugar
1 can (15 oz.) pumpkin
1-1/2 cups vegetable oil
3 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
12 oz. semi-sweet chocolate chips

Directions:

In a large bowl beat eggs, sugar, pumpkin and oil until smooth. Mix dry ingredients together and mix into pumpkin mixture. Fold in chocolate chips. Fill greased or paper-lined muffin cups to 3/4 full. Bake at 400°F for 16-20 minutes in the middle of the oven (if on bottom rack the bottoms of muffins will scorch).

I made it for my son's class for halloween, only I added about 10 oz. of chocolate covered raisins and only 5 oz. of chocolate chips. The kids loved it and it adds some healthier alternatives to all the candy. Although it seems the teacher loved them the most, so I sent her the recipe. Thanks. Next time I might try topping it with a cream cheese frosting kind of like a cupcake. |
