Ingredients:

1/2 cup cane vinegar *
1 head garlic crushed
1 tsp. fresh ground black pepper
1 bay leaf
2 tbsp. rock salt
1 cup dark soy sauce
1 tsp. sugar
1 lb. chicken, serving size
1 lb. pork, serving size
4 oz. sliced pork liver
1/2 cup water

Directions:

Combine all ingredients in a saucepan except water. Let soak for 45 minutes. Add water and mix well, simmer 1/2 hour, covered. (Don't open the lid, the acidity in vinegar will evaporate). Cook until a little oil is produced from the pork. Increase the heat for 5 more minutes. Serve with steamed rice.
