2 cups flour
3/4 cup sugar
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 cup shortening
2 tbsp. oil
1 tsp. powdered egg replacer
2 tsp. vanilla
1 cup cocoa powder
1 cup chocolate chips
1 to 1-1/2 cup water

Directions:

Combine shortening and flour in a food processer until well combined. Mix all dry ingredients together in a large bowl. Add flour/shortening mix and combine thoroughly. Add oil and vanilla to water, in 1/4 cup increments, until stable dough is formed. Stir in chocolate chips. Portion out cookies using small scoop and flatten out on cookie sheet to 1/2-inch thickness. Bake in preheated 350°F oven up to 12 minutes. Allow to cool slightly before moving to cooling rack.

Cookies will be soft and chewy if kept in an airtight container up to 3 days. Best if warmed to room temperature before eating.
