Italian Zucchini with Mozzarella

Ingredients:

3 to 4 young zucchini (about 5-inches long)
3 tbsp. olive oil
Italian seasoning
Garlic pepper
Salt
Shredded mozzarella cheese

Directions:

Scrub zucchini and remove ends. Slice lengthwise about 1/8-inch thick. Put olive oil in shallow bowl; add zucchini slices and toss. Lay oiled slices on cookie sheet. Sprinkle each slice with salt, garlic pepper and Italian seasoning, to taste. Turn each slice over and season. Put zucchini in middle of preheated 400°F oven. Bake 10 minutes, until slices are tender. Remove from oven and generously sprinkle with shredded mozzarella cheese. Return to oven and bake just long enough for cheese to melt and just begin to brown. Serve immediately.
