8 to 10 chicken thighs or
5 to 6 chicken quarters, with skins
8 lemons
10 cloves garlic, minced
3 tbsp. olive oil
2 tbsp. red wine vinegar
Salt and pepper, to taste

Directions:

Broil chicken, skin side up, until crispy. Meanwhile, remove pulp from lemons, and place in blender with all other ingredients. Blend until smooth. Flip over the chicken, and cover with lemon mixture. Shake on some salt and pepper. Broil again until done to your liking. Serve, with plenty of lemon sauce, over hot white rice and vegetables.
