1 tbsp. active dry yeast
1-3/4 cups warm water
2 tbsp. sugar
4 cups bread flour
1 tsp. salt
2 tbsp. dry italian seasoning (optional)
1 tsp. garlic powder (optional)
1 tsp. onion powder (optional)
1 tbsp. nutritional yeast flakes (optional)
1 tbsp. lecithin, oil, or shortening
1/2 cup olive oil
2 cloves garlic, finely chopped (optional)

Directions:

Mix yeast, sugar and warm water in a bowl; allow to proof for 10 minutes.
Then mix in bread flour, salt, Italian seasoning, garlic powder, onion powder, yeast flakes and lecithin/oil. Knead in mixer with dough hooks (12 minutes), bread machine on dough cycle (20 minutes), or by hand (10-15 minutes) until smooth and elastic. Transfer dough to lightly oiled bowl, cover with plastic wrap and allow to rise until double (45 minutes).
Punch down dough and divide into 24 pieces. Shape each piece into stick and place on baking sheet that has been lightly dusted with cornmeal. Allow to rise 45 minutes.
Preheat oven to 350°F. In small bowl mix olive oil and garlic. Brush each stick with oil mixture and sprinkle with herbs of your choice. Bake 20 minutes or until golden brown.

Try this, roll dough in noodle maker and cut your bread sticks. These are nice and pencil size. Make them as long as you want. |
