Ingredients:

2 cups vegan chocolate chips
1 cup chocolate soy or rice milk
1 shot of your favorite liqueur (optional) *
2 tsp. vanilla extract (optional)
1 cup cocoa powder, for rolling

Directions:

In small sauce pan, bring milk product to a boil. Turn off heat and add chocolate chips, stir gently with spatula until melted. Add choice of flavoring and mix well.

Pour melted mixture into shallow bowl, covered, and place in freezer until firm (minimum 6 hours or overnight).

Once firm, use tablespoon measure to scoop out small ball of chocolate (2 bites worth). Wearing gloves, quickly roll chocolate into a ball and roll in cocoa powder to coat. Return finished ball to freezer and serve frozen.

These are suprisingly good. A lot of chocolate flavor in a cool soft truffle.

Truffles will melt at room temperature. Always keep frozen or refrigerated.

* I've found Amaretto, Chambord, Triple Sec, and Frangelico types to work the best
