Ingredients:

1 can (28 oz.) diced tomatoes or 2 cups diced grape tomatoes
1 lg. red onion, diced
2 md. pickled jalapenos
2 cloves garlic, chopped
2 tbsp. freshly chopped cilantro
1 tsp. ground oregano
1 tsp. cumin
2 tbsp. olive oil
2 tbsp. vinegar
1 fresh lime, juiced

Directions:

Slice peppers in half; remove seeds and chop into small pieces. Roll lime to release juices and squeeze into bowl. Add all ingredients into a bowl; mix, cover and chill.

Very good salsa! I added more cilantro and used only half of the olive oil. The hubby wants to try it with white or yellow onion next time, and I want to make it with fresh tomatoes. And it's definitely good with a cold refreshing brewski!
