Ingredients:

4 lb. potatoes
3/4 cup sour cream
12 slices bacon, cooked and crumbled
2 tbsp. chives
2 green onions, sliced
1 stick butter or margarine
1 cup Cheddar cheese

Directions:

Peel, chop and cook potatoes until tender; drain. Mash in bowl. Mix sour cream, 3/4 of the bacon, chives, 1/2 of the green onions and butter. Mix with a hand mixer until mixed well. Pour into an oven safe bowl. Top with cheese, remaining bacon, and onions. Bake at 350°F for 20 minutes or until cheese is melted and bubbly.

This recipe is so easy. The only change we made was more butter (to help make the potatoes creamier) and add cheese to the actual potato mixture, not just on top. It came out SOOOOO good.
