Ingredients:

2 cups sliced mushrooms
1 tbsp. butter or margarine
2 tbsp. sliced green onions
1/2 cup clam juice
14 oz. peeled and deveined uncooked shrimp
1/2 plain yogurt (lowfat or regular)
1/4 cup sour cream
1 oz. grated Parmesan cheese
1 lb. fettucine/pasta
Fresh parsley for garnish

Cajun Spice Mix:
1/4 tsp. salt
1/4 tsp. paprika
1/8 tsp. white, red and black pepper
1/8 tsp. thyme
1/8 tsp. oregano
1/8 tsp. onion powder

Directions:

Mix cajun spices in small bowl.

Heat water for pasta.

Melt butter in a large skillet. Saute mushrooms and green onions, about 4 minutes. Add clam juice. Bring to a boil. Add shrimp. Cook three minutes, tossing frequently, until shrimp are pink. Remove from heat. Stir in yogurt, sour cream, parmesan cheese and spice mix.

Cook pasta al dente. Place in serving bowl. Add shrimp mixture on top. Sprinkle with parmesan and fresh parsley.

This recipe is very forgiving, and very delicious. I usually use 1/2 cup sour cream and omit the yogurt if I don't have it on hand.
