Ingredients:

1 lb. ground beef
1 sm. can diced chilis
1 lg. can refried beans
1 pkg. taco seasoning
2 cans (12 oz. each) enchilada sauce
Garlic powder, to taste
Dried onions, to taste
1 pkg. (lg.) tortilla chips
1 pkg. pre-shredded Mexican cheese

Directions:

Preheat oven to 350°F. Place refried beans into a microwave safe container and heat on high setting for 3 minutes. Mix and set aside.

Brown ground beef and drain. Add can of diced chilis, 1/2 packet of taco seasoning, and 1/2 can of enchilada sauce. Mix. Remove from heat and set aside. Using a 11x9x2 casserole dish, place the ingredients in layers:

Crumbled chips
Refried beans
1/3 packet of cheese
1/2 can of enchilada sauce
Crumbled chips
Ground beef mixture
1/3 packet of cheese
1/2 can of enchilada sauce
Crumbled chips
Remaining enchilada sauce
Remaining cheese

Bake in 350°F oven for 15 minutes or until cheese melts and is all bubbly. Remove from oven and slice into 2-inch squares. Serve with dollop of salsa and fat free sour cream on top.

Threw this together after work one day. My 2-1/2 year old daughter loves it. Makes enough for a couple of days worth of leftovers :)
