Ingredients:

2 cups sugar
1 stick butter
4 tbsp. cocoa powder
1/2 cup milk
3 cups oatmeal
1/2 cup chunky peanut butter
1 tsp. vanilla
1 pinch salt

Directions:

Melt butter in a 3 qt. saucepan over low heat. Stir in milk, cocoa and sugar; bring to a low boil while stirring. Boil 1 minute only, being careful not to scorch the sugar. Remove from heat and add the rest of the ingredients, except oatmeal, and mix thoroughly. Add oatmeal; mix well to ensure the peanut butter melts. Drop by spoonfuls onto a waxed paper covered cookie sheet. Chill. Once cool store them in the refrigerator or freezer.

I love these cookies. They are extremely fast and easy to make requiring no baking. The only tricky part is temporarily finding room in the fridge for two cookie sheets.
