Ingredients:

1 lb. ground beef
1 pkg. taco seasoning mix
4 oz. sour cream
1 can (12 oz.) refried beans
12 oz. shredded cheese
Cornbread twist rolls

Directions:

Brown ground beef. Stir in taco seasoning mix. Spread mixture into 8x8-inch baking pan. Spread warmed refried beans on mixture. Top with sour cream and shredded cheese. Layer strips of cornbread rolls on top. Bake at 375°F for 15 minutes or until brown.

This recipe was really good, BUT very salty because of the taco seasoning. I think if I make it again, I will prepare the meat with the taco seasoning according to the package directions and then go from there, to cut down on the saltiness. Or I may add my own chili powder and cumin, etc.


I made this easy dish for a Friday night get-together recently. I added a small can of chopped green chili's and 1/2 cup of chunky salsa to the cooked meat mixture. It gave the dish some nice zip, and it tasted great.
