Ingredients:

1 can condensed milk
1 pkg. (14 oz.) flaked coconut (not moistened)
1 to 2 lb. confectioner's sugar
1 stick butter or margarine, room temperature
Ground cinnamon

Directions:

Place first 4 ingredients in large bowl. Cream with a large heavy spoon. Roll in one-inch balls. Dump some cinnamon in a bowl or plate. Roll balls in cinnamon and shake off the excess.

Everyone looks for me during St Patricks day for this candy. They feel I have put tons of work into it. The most work is rewriting the recipe for everyone.

My variation:

Shred the coconut in a food processor until fine (I hate chewing coconut). Continue recipe, and even people who hate coconut will gobble this one up!

Shredding the coconut makes the balls a bit creamier. Also add a bit more vanilla, or for adults, 1T of Jameson's.


I used this for a school project and got top marks.. They taste so good!
