1 mango, pureed
2 limes, rind and pith removed
2 spring onions
6 to 8 cherry tomatoes, halves
1 pinch dried mint
1 pinch dried red chillies

Directions:

Segment your lime and break up carefully into small chunks. Finely chop the spring onions, using mostly the green parts. Place lime chunks, spring onions and cherry tomatoes in a bowl and add the pureed mango. Add the mint and chillies and stir. Leave in the fridge for 1/2 hour to allow the flavors to develop, then serve with cold cuts and peppery salad leaves.
