Ingredients:

2 lb. rice
1/2 pint kidney beans
1 tsp. black pepper
1 tsp. all-purpose seasoning
1 whole hot pepper
2 tbsp. butter
Salt, to taste
2 sprigs escallion
1 sprig thyme
2 cups coconut milk

Directions:

Cook kidney beans until soft to the touch. Season pot with all ingredients except rice. Bring to a boil. Wash and add rice. Meal is ready when rice is cooked.

Comments from avagale :

To make rice fluffy, keep flame low. Do not allow pepper to burst in pot.
