Ingredients:

4 tbsp. minced garlic (save 1 tsp.)
3 tsp. salt
6 tbsp. extra-virgin olive oil
1 lb. thin spaghetti
3 tsp. chopped parsley
1/2 lemon, juice of
Grated Parmesan cheese
1 cup pasta water, held before draining pasta
1 tsp. salt

Directions:

Cook spaghetti as directed, but add 3 tsp. salt to water. In a heavy skillet, cook olive oil with 1 tsp. salt and garlic over low flame. This mixture will become foamy and sweeten as it cooks. When the noodles are cooked, drain well and mix with garlic-oil mixture. Add lemon juice, and water as needed. Add 1 tsp. garlic and parsely. Blend well and serve with grated Parmesan.
