Ingredients:

2 cans pickled beets
1/4 cup sugar
2 tsp. vinegar
1 jar horseradish, to taste
Sour cream (optional)

Directions:

Place beets in blender and blend until fairly smooth. Removed from blender and place in a 1-quart bowl. Add sugar and vinegar; stir until blended. Add horseradish; stir to blend. Taste sauce and adjust seasonings as desired.

I SPLIT THE BATCH IN HALF AND MAKE ONE WITH MORE HORSERADISH FLAVOR AND WITH THE OTHER HALF I ADD THE SOURCREAM ( FOR THOSE WHO LIKE JUST A LITTLE LESS BITE.) THIS IS A WONDERFUL WONDERFUL RECIPE TO SERVE WITH HAM AND A STAPLE AT OUR EASTER DINNER.

YOUR FAMILY MAY JUST LOVE A STRONG HORSERADISH SAUCE SO ADD AS MUCH AS YOU THINK THEY WILL LIKE. WE HAVE THOSE WHO CANT GET ENOUGH OF IT BUT THEN THEIR ARE THOSE OF US (ME) WHO PREFER IT WITH THE SOUR CREAM..THIS IS AN OLD HUNGARIAN RECIPE THAT I HAVE CONVERTED TO MODERN TIMES..NO MORE BOILING THE BEETS AND GRINDING THE HORSERADISH AND BELIEVE ME ITS JUST AS GOOD AND BECAUSE I WAS THE ONE WHO HAD TO DO IT..ITS BETTER !
