Ingredients:

2 bunches spinach, washed
4 red d'anjou pears, sliced in 1/6ths
3/4 red onion, sliced
6 oz. crumbled goat cheese
1/2 recipe Maple Syrup Pecans
1/4 recipe Maple Syrup Vinaigrette
Fresh cracked black pepper, to taste

Directions:

Place spinach on plate. Place red onion sparingly over salad. Place 4 pear slices on each salad. Sprinkle goat cheese and pecans on top. Garnish with black pepper. Top with vinaigrette, to taste.

This recipe was inspired by a trip to Vermont, from which I returned with a gallon of maple syrup and a growler of maple syrup ale. I needed to find something to make using the syrup that would go great with the ale, and this is what I came up with. Enjoy!
