Ingredients:

3 to 3-1/2 cups pecan halves
4 lg. eggs
1 cup brown sugar
6 tbsp. butter, melted
1 cup dark corn syrup
3 tsp. vanilla extract
1 premade pastry crust

Directions:

Heat oven to 350°F. Chop up 2 cups of the pecan halves; set aside. Beat the eggs, corn syrup, butter, brown sugar, and vanilla in a mixing bowl until well blended (about 2 minutes). Add the chopped pecans and stir. Pour filling into the pastry shell. Add remaining pecan halves to top of pie filling and put into a concentric design. Bake for 70 minutes at 350°F.

Cool. Serve with whipped cream or vanilla ice cream.
