Ingredients:

1/3 cup flour
1/4 tsp. salt
3 tbsp. heavy cream
2 eggs, beaten
1 cup ground almonds
1 cup fresh breadcrumbs
1 tbsp. cayenne pepper
1 whole frying chicken, cut into eighths
1/2 cup corn oil

Directions:

Preheat the oven to 350° F. Set up an assembly line to prepare the chicken for frying. Place, in order, a plate with the flour and salt, a wide bowl filled with the cream and eggs, and a plate of the almonds, breadcrumbs, and cayenne pepper. Coat each piece of chicken, one at a time, in the flour, egg, and breadcrumb mixtures. Set aside.
In a wide, heavy skillet, heat the oil over high heat. When it is hot, add the chicken, two pieces at a time. Turn as each side browns. Remove to paper towels to drain off the excess oil.
When all of the chicken has been fried, place in a baking pan and cook in the oven for 20 minutes.
