Clam Sauce with White Wine and Tomatoes

Ingredients:

1/8 tsp. olive oil
1/4 cup dried parsley
4 cloves garlic minced
2 cans minced clams, undrained
1 can diced tomatoes, drained
1/4 cup white wine
Italian seasoning, to taste
Salt and pepper, to taste

Directions:

In a large saucepan, on medium heat, heat garlic in oil until tender. Add clams with liquid stirring slowly. Add parsley and Italian seasoning while stirring. Bring to a boil, reduce heat and simmer for five minutes. Stir in tomatoes, simmer for ten minutes. Stir in white wine, salt and pepper. Simmer for ten to fifteen more minutes (remember, clams cook fast). Remove from heat, serve over hot pasta.
