Ingredients:

1 egg
Italian-style bread crumbs
2 lg. potatoes
1 tbsp. chopped onions
1/4 cup Spanish rice
1/4 cup ground beef or shredded steak *
1 tbsp. chives
1 tbsp. water

Directions:

Microwave potatoes on high setting for 1-2 min. Mash and add water, onions and half of the chives. Make a half-inch thick rectangle pattie. Spread Spanish rice and ground beef on to pattie. Slice pattie in two even sections. Roll into suasage-like shape. Cover in egg, then in bread crumbs. Fry in skillet until lightly brown. Garnish with rest of chives.

Croquet may be a little bit tender when flipping in pan- handle delicately.
