1 loaf Italian bread, sliced
1 lg. tomato, chopped finely
1 md. onion, chopped finely
2 tbsp. arugula, chopped fine
1 tsp. fresh basil, chopped fine
Olive oil
Salt and pepper to taste

Directions:

Toast the thick sliced Italian bread in a broiler, making sure you toast both sides.
Chop all the ingredients, except the olive oil fine, and mix together well. Add a touch or so of olive oil to the mixture after draining off some of the liquid of the vegetables.
Salt and pepper to taste. Spread a tablespoon or so on each slice of toasted bread. Serve while toast is still warm and crisp.
