Pesce Giardino - Fish Steaks with Fresh Vegetables

Ingredients:

8 (3/4 to 1-inch thick each) swordfish or tuna steaks
2 firm tomatoes
1 sm. sweet onion
1/2 cup fresh basil, chopped fine
2 tbsp. fresh arugula, chopped fine

Directions:

Chop the tomatoes, onion, basil and arugula finely and mix together. Drain any liquid from the mixture. Grill the fish steaks until properly done, about 5 minutes per side for a 1 inch thick steak (Less for rare tuna). Remove from grill.

Spread a layer of the vegetable mixture over each fish steak. Serve Immediately with lemon wedges.

This is a simple and effective dish!. Please DO NOT use a food processor to chop the vegetables. You will end up with mush. The veggies should be chopped fine, yet still crisp.
