Ingredients:

1/2 cup chopped dried apricots
1/3 cup orange juice
1/4 cup butter or margarine, softened
2/3 cup sugar
1/3 cup packed brown sugar
2 lg. egg whites
1 tsp. vanilla
1-1/2 cups flour
1/2 cup cocoa
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2/3 cup white chocolate chunks or chips

Directions:

Preheat oven to 350°F.

Place the apricots and orange juice in a small saucepan and bring to a boil over medium heat. Remove from heat and set aside to cool slightly.

In a large bowl, beat butter, sugar and brown sugar until well blended. Beat in egg whites and vanilla until smooth.

In a medium bowl, combine flour, cocoa, baking soda, baking powder and salt. Add the apricot mixture and the flour mixture to the sugar mixture and stir just until the dough begins to come together. Add white chocolate and stir just until combined.

Drop round spoonfuls of dough about 2-inches apart on a cookie sheet that has been sprayed with non-stick spray. Bake for 12-15 minutes, until set around the edges but still soft in the middle.
