1 chicken, cut up into pieces (8-10)
2 tbsp. mixed spices (your choice)
1 tbsp. granulated garlic
Salt, to taste
1 cup bread crumbs
1 cup freshly grated Parmesan cheese
4 potatoes, quartered
1 onion, sliced
Vegetable coating spray

Directions:

Preheat oven to 375°F. Combine spices, garlic, Parmesan cheese, salt and bread crumbs into a plastic shaking bag. Spray bottom of metal baking pan. Place a layer of thinly sliced onions in bottom of pan. Spread cutup potatoes over bottom. Dredge chicken pieces (with or without skin) into mixture in plastic bag. Shake until thoroughly coated. Place chicken pieces over potatoes. Bake uncovered in oven for about 1 hour.

The fat will run down off the chicken pieces, picking up the flavor of all the spices and cheese; and pass them on to the potatoes underneath. The chicken will be tender and very flavourful.
