6 to 8 md. potatoes, boiled, cooled, peeled and cut into bite sized chunks
1 md. onion, chopped
2 tbsp. light flavored canola oil or corn oil
2 tbsp. sweet pickle juice (or apple cider vinegar and sugar to make sweet/sour)
1/4 to 1/2 cup Parmesan cheese, to taste
1 to 1-1/2 cup mayonnaise
Salt and pepper, to taste
Paprika

Directions:

In large bowl mix together potatoes and onions. Sprinkle oil and pickle juice (or vinegar and sugar) and toss all lightly. Sprinkle parmesan in tossing lightly with each sprinkle to coat entire batch. Add salt and pepper to taste. Mix in mayonnaise and sprinkle a little paprika on top for color. Chill.
