Ingredients:

4 eggs
1 can sweetened condensed milk
1/2 cup key lime juice
6 tbsp. sugar
1/2 tsp. cream of tartar
1 pie crust

Directions:

Preheat oven to 325°F. Beat 4 egg yolks. Add condensed milk and lime juice. Beat until thick, then pour into baked pie shell.

For a topping, beat 4 egg whites; blend in sugar and cream of tartar. Beat until stiffened.

Bake until egg whites are golden brown!

Comments from Maura :

1/2 cup of lime juice may be substituted instead of Key Limes juice, though key limes are highly preferred. After you use your egg yolks for the pie, remember to keep the egg whites for the topping.

Goes great with Fresh Lime Ice Cream!!!
