Ingredients:

1 can cream of chicken soup (undiluted)
8 oz. sour cream
3/4 cup margarine, melted and divided
3 tbsp. dried minced onion
1/2 tsp. salt
1 pkg. (32 oz.) frozen hash brown potatoes, thawed
2-1/2 cups shredded cheddar cheese
2 cups Durkee french fried onions

Directions:

In a large bowl, combine soup, sour cream, 1/2 cup margarine, minced onion and salt. Stir in potatoes and cheese. Transfer to a greased casserole. Toss Durkee french fried onions with remaining margarine. Sprinkle mixture over potatoes. Bake, uncovered at 350°F for about an hour.

Try it with crushed Ritz (or corn flakes) topped with melted butter. I use "potatoes o'brian" and jalpeno jack cheese for a spicy kick. My lover loves it!
