Ingredients:

Flour
1 egg, beaten
Kasseri cheese
3 tsp. olive oil
1 lemon cut in halves or quarters
1 oz. brandy (optional)
fireplace match (optional)

Directions:

Cut the Kesseri cheese into 4x4-inch squares, dip into beaten egg and flour both sides and edges for the squares. This keeps it from melting away during cooking. Fry the squares in heated olive oil until golden. Turn off burner and immediately add brandy. Set afire with long match (for the brave at heart only, but traditional). Put out the flame with lemon juice. Serve sizzling with coarse bread (Italian or French).
