1 pkg. tri-color rotini pasta
1 jar pepper relish (should be red)
1/2 can tomato paste diluted with water
Italian marinated mushrooms (if possible)
1 jar sliced green olives
1 can (sm.) chopped black olives
1 jar diced pimentos
Grated Parmesan cheese

Directions:

Boil rotini pasta 15 to 20 minutes. While pasta is boiling, dilute about half the can of tomato paste with water to make the consistency of a sauce. In a bowl, combine tomato paste mixture and entire jar of pepper relish (stir together). When pasta is finished boiling, combine it to the sauce mixture. Next add olives, mushrooms (chop first), and pimentos. Stir well. Sprinkle parmesan lightly if desired and add black pepper for extra spiciness.

The pepper relish is what makes this dish so tasty. It has a spicy and mildly hot taste along with a bit of sweetness. It is good chilled or at room temperature.
