1-1/2 lb. lean ground beef
1 cup tomato juice or V8 juice
3/4 cup quick oats, uncooked
1/2 cup chopped bell pepper
1 egg, lightly beaten
1/2 cup chopped onion
Salt and freshly ground pepper, to taste
1/4 cup minced parsley

Directions:

Heat oven to 350°F. In a large bowl, combine all ingredients, mixing lightly but thoroughly. Press meatloaf mixture into a loaf pan. Bake 1 hour or until a meat thermometer registers 160°F. Remove meatloaf from pan and let set 5 minutes before slicing.
