Ingredients:

8 oz. cream cheese, room temperature
2 sticks butter, room temperature
2/3 cup sugar
1/2 tsp. vanilla
2 cups flour
Colored sugar

Directions:

Heat oven to 350°F. Beat cream cheese, butter, sugar and vanilla in a mixer bowl until well blended. Add flour; mix well. Chill, if desired for easier handling. Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with cookie cutters; sprinkle with colored sugar. Place cookies on ungreased cookie sheets. Bake 12-15 minutes or until edges are lightly browned.

Many bakers tell me they like to chill this dough for about an hour so it isn't so fragile. I like it without chilling. If you decide to chill it and find it hard to work with, just let it come to room temperature before continuing to roll the dough.
