5 lg. baking apples
1 tbsp. margarine or butter
2 sticks celery, chopped
2 tsp. chopped dill
2 tsp. chopped parsley
1/2 tsp. pepper
1/4 tsp. caraway seeds (optional)
2-1/2 cups rinsed, drained sauerkraut, chopped
1/2 cup diced ham (optional)
1/4 cup dry white wine or water

Directions:

Prepare the apples by removing the stems and cutting off the top. remove the cores. Scoop out the apples, leaving a 1/2-inch shell, and chop up the pulp. Preheat oven to 350°F.
Melt the margarine or butter in a large skillet. Add the celery, dill, parsley, the caraway if using, and the APPLE PULP. Add the sauerkraut and ham, frying slowly, stirring occasionally, until the sauerkraut starts changing color.
Cool slightly, then fill the apple shells with it. Place the apples in a baking dish. Add the wine to the apples, and bake them until they are tender, basting frequently.
