Potato Encrusted Salmon Fillets

Ingredients:

2 (6 to 8 oz. each) salmon fillets
2 tbsp. whole grain mustard
1 lg. potato, peeled and grated
Vegetable oil for frying
Salt and pepper to taste

Directions:

1. Preheat oven to 350°F.

2. Check the fillets for pin bones.

3. Spoon 1 tablespoon of mustard on each fillet and spread to cover the top.

4. Pack 1/2 of the grated potato in your hands and place on top of each fillet and spread to cover. season with salt & pepper.

5. Heat 2 tablespoons of the oil in a large non-stick pan. Place each fillet with the potato side down in the now hot oil and brown until golden about 2-3 minutes.

6. Now put each fillet with the potato side up in a baking dish or tray.

7. Bake in hot oven to finsh about 15-20 minutes.

You can top this with about any sauce you want. But I prefer to use a mornay sauce with chives, garlic & lemon juice in it.
