Ingredients:

1 cup butter
1/2 cup powdered sugar
1 tsp. grated lemon peel
2 cups flour
5 eggs
2 cups sugar
1 tsp. grated lemon rind
1/3 cup flour
2 tsp. baking powder
1/2 cup lemon juice

Directions:

Mix together butter and powdered sugar. Add lemon peel and flour. Mix well. Press in well buttered 9x13-inch pan. Bake at 350°F for 20 minutes.

Meanwhile, beat eggs until light. Add sugar, beat until thick. Add lemon rind, flour and baking powder; mix well. Stir in lemon juice. Pour over baked shortbread. Bake another 15-20 minutes. (Center should jiggle when pan is shaken and top should be golden brown.) Remove from oven, cool, sprinkle with powdered sugar.

I cut in 18 bars. Can make larger or smaller if desired. Very rich and lemony.

I looked long & hard to find a recipe similar to what I had grown up with. This was awesome! I topped it with Glaze made from 1 cup Powdered Sugar & 2 Tbsp. Lemon Juice. It gave it the perfect finishing touch.
